孔子喜欢做工精细的食品,对菜肴要求刀工严格,肉丝要切得细而匀称,一定要达到形、色、味俱佳。因为这样能增加食欲,使人看着满意吃着香。对于饮食,孔子还有自己的原则:“食不厌精,脍不厌细。而且,鱼馁而内败,不食;色恶,不食;臭恶,不食;失饪,不食;不时,不食;割不正,不食;不得其酱,不食;肉虽多,不使胜食气。唯酒无量,不及乱;沽酒市脯,不食。不撤姜食,不多食。”(《论语·乡党第十》)。这段话的意思就是,对于放久而腐败变质的食物绝对不吃,对变了色有异味的食物不吃,对烹饪不得法达不到食用要求的不吃,对过了时节降低了菜肴品质的不吃,对不按规格要求胡乱取用的肉不吃,对主菜和调味品不配套的不吃,在宴席上要少吃肉多吃主食,能饮酒但不可喝醉,从集市上随便买来的酒和熟肉不吃,虽然席上佐料还有但不贪吃以适度为好。孔子对饮食健康的重视程度由此可见一斑。
